Very Easy Thai Coconut Cake

Let me tell you about my love story with a Thai Coconut Cake. There is a little hole-in-the-wall Thai restaurant in Atlanta called Little Bangkok. My husband David and I have dined there for years. The owner happens to be one of my friends’ aunt. David and I love their chicken coconut soup, the curry duck, the pad thai, etc. The food is delicious so we rarely save room for dessert. One afternoon, I took my friend Rachelle there for her birthday. We ordered the Thai Coconut c=Cake to celebrate the occasion. She and I were planning to share a piece, but I think I ate it all before birthday girl could get to it. The cake was so moist that it basically dissolves in your mouth. The whipped topping was light and airy. The cake itself felt velvety and fluffy, with just a light hint of sweetness. It was truly addicting. In fact, I went back and ordered the entire cake. When thinking of antioxidant, most automatically think of leafy greens. We forget that winter squash such as butternut also carries loads of antioxidant, vitamin C, anti-inflamatory, omega-3s, blood sugar regulation, prevention of type 2 diabetes, etc. So next time you’re at the grocery store, give the kale a break and bring home a squash. Below is a vegetarian friendly recipe using butternut squash. Enjoy! 2 tablespoons of olive oil 9 oz butternut squash (peel and cut into 1/2 inch cubes) 1 small onion, finely chopped 1 tsp grated fresh ginger 2 tbsp chopped cilantro 1 tbsp sriracha (optional – omit if you don’t want the rolls to be spicy) 4 tbsp chopped roasted peanuts 2 tbsp hoisin sauce (plus more for serving) salt and pepper spring roll wrappers, defrosted (can be found at Asian markets, frozen aisle) 1 egg, beaten frying oil sweet chili sauce (for dipping, optional) 1. Atlanta Highway Seafood Market

Gainesville,  Georgia – a simple little town that surely had seen better days. From small, dusty business buildings to the tiny mechanic shops that has lost its gloss and glamour,  this must be District 12 from Hunger Games. But, even the darkest coal mine has its shiny treasure. Tucked in the middle of Gainesville is Atlanta Highway Seafood Market,  directly off of its namesake street.
